Summer Veggie Meals

One of the great things about summertime is the abundance of fresh fruits and vegetables. And one of the great things about the abundance of fresh fruits and vegetables is how that impacts suppertime. 

Tonight, we had an all veggie meal featuring of our summertime faves. We do this frequently during summers; we should probably do it more often.

On tonight’s menu: roasted red potatoes, roasted egg plant, okra, sliced tomatoes, bread.

Over the years, I have always enjoyed these summertime veggie smörgåsbords.Okra is one of my faves (sometimes cooked with potato cubes; sometimes not) and you certainly can’t beat the richness of a vine-ripened tomato during the growing season. Years ago, Lisa introduced eggplant to our repertoire and I love it roasted or steamed.

Sometimes, in the winter, we’ll enjoy eggplant parmesean or when I’m grilling, Lisa will put together veggie packs that might include yellow squash, zucchini and/or eggplant.

We’ve been enjoying some succulent fresh fruit selections this season as well. Just this morning, I enjoyed some yummy strawberries atop my breakfast cereal and I have some blueberries ready to go for tomorrow. 

Gosh, all this typing is making my mouth water and we just finished our meal a little while ago!
